Different Ways to Make Bell Peppers Healthy and Less Boring


Bell peppers are one of the most nutrient-rich foods loaded with vitamins and minerals. They contain vast reserves of vitamins A, B6, C, E and K1, which have benefits ranging from antioxidants of blood clotting, eye health to skin health, heart health to fetal development. They can also prevent a variety of chronic ailments, as well as disorders like anaemia. Here are five easy ways to prepare them:

Boiled- Popular and easy, boiling peppers retain its flavour along with its nutrients. All you need to do is add a few tablespoons of vegetable broth or water in a saucepan and add the bell peppers, cover and let it boil for a few minutes. You can then add more broth or water, add salt and seasoning as per taste and gently stir for another few minutes. You can add this to a salad or top it up with a few nuts and eat.

Stuffed- It combines the goodness of peppers with other veggies. All you need to do is slice the bell peppers into half and clean well.  Then take any vegetable of your choice like carrots, beets, potatoes etc and stuff each bell pepper half. Bake an oven for 25-30minutes.

Stir-Fried- Slice 3 different coloured bell peppers into large squares, then add some olive oil to a pan, pour them in, and stir-fry along with seasoning until the peppers are well done. You can also add other veggies like broccoli, carrots, or even chicken to the mix.

Dip- Roasted bell pepper dip traditionally found in mezze platters are a wholesome way to get the goodness of bell peppers as well as walnuts. Drizzle sliced bell peppers with olive oil and bake them in the oven till they are well roasted and blackening, remove them and toast the walnuts in the oven for 10 minutes, making sure they don’t burn. Peel the skins off the peppers, add the walnuts and then blend along with some garlic cloves, olive oil, lemon juice and seasoning.

Soup- Roast 2-3 bell peppers and finely dice them along with some onion, celery and carrot. Also, add some basil leaves and 2 cloves garlic to the mixture. Then heat some olive oil in the pan, sauté all of this with any seasoning of your choice and then add four cups of water and boil.
